Why it works
Classic Dan Dan noodles are delicious but carb-heavy. Swapping in Allmighty Oat Fettuccine – made from konjac enriched with oat fibre at 9 calories per 100g – keeps the chew and the sauce-clinging texture while cutting the carbs right down. The pork and peanut butter do the heavy lifting on protein and richness, so you get a full, satisfying bowl in 10 minutes.

29g protein | 305 kcal | 5g carbs
Tips
- Rinse and drain the noodles well, then pat dry – it's the difference between a sauce that clings and one that pools.
- Adjust the chilli oil to taste; Lao Gan Ma brings both heat and crunch.
- Swap the pork for minced chicken, turkey, or crumbled tofu to suit.
- Add blanched greens – bok choy or broccoli – to bulk out the bowl for almost no extra calories.
