Low-Carb Kimchi Fried Rice

Ready in 15 minutes | Serves 1
Kimchi fried rice is peak comfort food – salty, sour, spicy, and umami. This version is all of that, but swaps white rice for Allmighty Rice, so you get the same big bowl at a fraction of the carbs and calories.
Ingredients
- 1 pack Allmighty Rice (200g drained)
- 150g kimchi, roughly chopped (plus 1 tbsp of the kimchi juice)
- 2 slices Spam Lite (about 55g, roughly ¼ of a small tin), cut into cubes
- 2 spring onions, chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp neutral oil, for frying
- 1 egg, for topping
- Seaweed flakes, for topping
Method
- Rinse and drain Allmighty Rice, then dry-fry it in a hot pan with no oil for 1–2 minutes to drive off excess moisture. Set aside. (This is the step that keeps the dish from going soggy.)
- In the same pan, add neutral oil and stir-fry the spring onions until aromatic.
- Add the Spam cubes and the chopped kimchi. Fry until the edges start to caramelise and turn golden.
- Return the rice to the pan. Add the soy sauce, a splash of kimchi juice, and the sesame oil, tossing everything together until well coated and heated through.
- In a separate pan, fry the egg to your liking.
- Plate the rice, top with fried egg and seaweed flakes, and scatter over any remaining spring onion.

Why it works
A standard bowl of kimchi fried rice runs well over 500 calories, most of it from the white rice. Allmighty Rice is made from konjac enriched with oat fibre at just 9 calories per 100g, so the base of the dish contributes almost nothing to the calorie count – the flavour comes entirely from the kimchi, Spam and sesame oil. Same comfort, far lighter.
Tips
- Dry-fry the rice first. It removes excess water so the grains fry properly instead of steaming.
- Use well-fermented kimchi. Older, sourer kimchi gives much deeper flavour than fresh.
- Don't skip the kimchi juice – it's where a lot of the tang lives.
- Swap the Spam for bacon, chicken, or tofu; add a spoonful of gochujang if you want more heat.
